Happy Easter!

We are living in crazy times and to anyone who is reading this, the first thing I want you to know is that you and yours are in my thoughts. I hope everyone is able to celebrate Easter in whatever form they deem appropriate today but, I recognize that many people are going through some difficult times right now. I hope that sooner than later, this experience will be a distant memory.

With that said, it’s my hope that I can help spread a little joy and center our thoughts around some positivity during this time. Today’s cake is, of course, an Easter cake! =)

He’s had one too many carrots but he’d still like another.

I figured what better way to start this blog during these times than with such a positive and happy holiday. As with anything I do, I began to question many aspects of Easter. I don’t know about all of you but I had no idea why we have Easter bunnies and colorful eggs. As a result, I decided to do a little digging and see what I could learn.

Here are some quick facts, some of which I’m sure we all knew and others that may come as a surprise:

  • Christians celebrate Easter as the day that Jesus was resurrected.
  • Many holidays fall around the changing of the seasons and for Easter, it’s Spring.
    • Spring is seen as a time of hope and rebirth.
  • Easter has connections to the Jewish festival of Passover.
  • It was only when the concept of childhood, actually enjoying your youth rather than simply preparing for adulthood, started to significantly emerge that Easter became a more family-focused holiday.
    • This is what led to the Easter bunny bringing eggs to children.
      • No one knows exactly how the Easter bunny came to be but one belief is that German immigrants brought the story with them when they settled in Pennslyvania in the 1700s.
    • Decorated eggs had been a part of the Easter tradition for quite some time due to their connection with life.
  • Easter candy sales are second only to Halloween.

In honor of this bright, happy, uplifting holiday–regardless of how or why you might celebrate it–I decided to make a carrot cake with chocolate cream cheese frosting and regular cream cheese frosting. This happy little Easter Bunny was on his way with his basket of goodies when he spotted a large carrot that he couldn’t resist.
